What is Cava?

Cava, like champagne, is a high-quality sparkling wine. Its presence at the table confers elegance and distinction, and indicates, most of all, shared happiness. Cava has had its standing recognized on account of its traditional production method, and occupies a distinguished place amongst the world’s sparkling wines.

The term sparkling refers to any wine in which the CO2 bubbles are clearly visible. Their formation is achieved by various means and this makes an important distinction between a cava or a champagne and a mere carbonated wine. Cava is produced by the traditional method with a secondary fermentation of the wine in the same bottle in which it is sold; the bubbles are formed naturally. Sparkling wines made by the traditional method produce finer, more persistent bubbles than those made by other methods, such as adding CO2 to a still wine or by other methods such as GranVas.

 

Codorníu

The imposing Codorníu winery buildings in Sant Sadurní d’Anoia were constructed between the end of the 19TH century and the beginning of the 20th (1895-1915). They were declared a Monument of Historical and Artistic Interest in 1976 and represent one of the most outstanding examples of winery architecture designed specifically for the production and ageing of cava. The winery is not only an impressive architectural complex – it continues to be the neuralgic centre, and indeed symbol, of Codorníu’s tradition and values.

Vineyards

Codorniu requires some 6,000 hectares of vineyard to supply the winery. Its own vineyards cover 30% of its production and the remaining 70% is bought from several hundred growers in the Penedes region, with whom Codorniu has long-term working agreements.

All these growers receive technical advice on the cultivation of their vineyards and benefit from the advances and improvements in Research and Development, especially at Raimat.

Winemaking:

Codorniu controls the production process of all its cavas from vineyard planting to finished product. The winery has the most modern installations and the very latest equipment.

The equipment for fruit reception is located in the buildings at ground level together with the destemming machinery, presses and stainless steel tanks, where fermentation is carried out at controlled temperatures. The winery's six presses, four pneumatic and two continuous systems, allow grapes to be pressed in optimum conditions for production of the Codorniu cavas.

Beneath Codorniu's buildings there is a labyrinth of subterranean passages that extends for more than 30 kilometres. Here bottles are stored for ageing and during secondary fermentation. All Codorniu wines undergo secondary fermentation which lasts between eighteen months and four years. Each year the winery produces about 27 million bottles.

The Codorníu family’s wine business goes back to the middle of the 16th century. A documentof that period states that the family had several machines and implements relating to the wine industry. In 1659 Anna Codorníu married Manual Raventós and the families, each with a long wine tradition, were united. Years later, in 1872, Josep Raventós produced cava for the first time in Spain using the “Traditional Method” and established a completely new industry in the Penedés region.

The imposing winery which houses the Codorníu cellars was built by the architect Josep Puig i Cadafalch who, together with Gaudí, was one of the outstanding exponents of the school of modern architecture. His designs, of great originality and conceptual audacity, today form part of Spain’s architectural heritage and are the subject of major academic studies. It is not surprising, therefore, that the Codorníu cellars were declared a National Monument of Historic and Artistic Interest in 1976, in view of their pure modernist style.

Montserrat and Cava Trail Small Group Day Trip from Barcelona

Departure is from Barcelona at 9:00am, and from Barcelona we will head straight to Montserrat, just over an hour and a half away. On arrival, you have various options. A visit to the Sanctuary where the Moreneta is housed is a must. The sanctuary has been in use for almost 1000 years for those pilgrims and other visitors who have climbed this spectacular mountain. At 1pm on weekdays there is the opportunity to hear one of Europe's oldest children's choirs, La Escolania de Montserrat. There is also the opportunity to visit the fascinating Museum of Montserrat, with its five collections ranging from Archaeology from the Biblical East to Modern Painting and Sculpture.

Besides these cultural possibilities, the paths of the Montserrat parkland lead you around a number of different walks, each offering a different perspective on the stunning views over the surrounding landscape, and many of which are peppered with small chapels and hermitages. There are routes to suit all tastes and energy levels, from fairly strenuous treks to gentle strolls around the park area, all of which allow you to marvel at the views and to enjoy the unspoiled beauty of this protected natural park. Another option is to take one of the two rack railways, or the cable car, offering different views of the area. Alternatively, the views can simply be savored from the cafe, which offers panoramic views of the valleys.

At 2.30pm, the tour will leave Montserrat, to drive down to Sant Sadurni d'Anoia, the Cava Capital, via Gelida, to visit some of the biggest underground wine cellars in Europe. Sant Sadurni d'Anoia is situated in the Penedes wine-growing region, which boasts one of the widest varieties of grape of any wine-growing region in the world. The region received a major boost in the late 19th-century when French vineyards succumbed to parasite, although Penedes itself was later struck by the same problem. Production has since recovered, and Cava is now a major rival to French champagne; in fact, the main difference between Cava and champagne is simply the region in which they are produced.

One of the most famous wine producers of the Penedes region is Freixenet, and the tour will continue with a visit to their vast wine cellars, where they will demonstrate exactly how the famous sparkling wine is produced, from the first pressing of the grapes to the second fermentation in the vast expanse of cellars. This will of course be accompanied by the chance to sample the product, to see exactly why it has acquired such international fame. From here, the tour returns to Barcelona, arriving at 7:00pm.
